
Coconut Basil Pesto Buddha Bowl

Ingredients:
2 cups packed basil1 clove garlic
1/4 cup cashews (rinsed and drained)
1/4 cup @c2ococonutwater with pulp
1/4 cup extra-virgin olive oil
1/2 lime (juiced)
salt
Directions:
Combine 2 cups packed basil + 1 clove garlic + 1/4 cup cashews (rinsed and drained) + 1/4 cup @c2ococonutwater with pulp + 1/4 cup extra-virgin olive oil + 1/2 lime (juiced) + salt, to taste in a food processor. Process until smooth. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve on a bed of spinach + zucchini noodles + cucumber ribbons + steamed green peas + avocado.
