Key Lime Pie
Key Lime Pie

Ingredients:

Crust:.
1 cup rolled oats
1 cup coconut flour
1/2 cup melted coconut oil
3 tbsp maple syrup
2 tbsp lime juice

Filling:
1 cup coconut milk (full fat)
1/4 cup @c2ococonutwater with pulp
1/4 cup lime juice
1 1/2 tsp agar agar powder
1 tsp vanilla extract
1/2 tsp matcha powder (dissolved in 1 tbsp lime juice)

Directions:

  1. Process the crust ingredients and press into 3 (4-inch) tart pans rubbed with coconut oil and dusted with flour…
  2. Freeze while you make the filling…
  3. Whisk the filling together in a saucepan, bring to boil, stirring all the while. Let it simmer for only 1 minute, remove and let cool
  4. Pour into tart crusts, and refrigerate overnight
