
Quinoa Bowl

Ingredients:
1 cup of rinsed and drained quinoa2 cups of @C2ococonutwater
greens
chickpeas
tomatoes
avocado
cucumber
roasted hazelnuts
pomegranate seeds
tahini dressing
Directions:
To make it: combine 1 cup of rinsed and drained quinoa with 2 cups of @C2ococonutwater. Bring to a boil and then lower the heat to a gentle simmer. Cover and cook for 15 minutes. Turn off the heat and let it sit for 10 minutes. Then add it to a bowl of greens + chickpeas + tomatoes + avocado + cucumber + roasted hazelnuts + pomegranate seeds + drizzle with a tahini dressing!
